Cupcakes are the perfect size for a lot of things. I’ve prepared meatloaf cupcakes in the past and they were a huge hit. It made sense to try something in the breakfast realm. Ingenious but easy and full of possibilities. I added salsa to one of the cups, and avocado with grated cheese to another. I like my yolks intact and a little soft. You can crack the eggs with the yolk whole or scramble the eggs if you want. Your choice, go for it!
Pre-heat the oven to 400 degrees.
Using a cupcake pan, line each cup with bacon. Wrap around the sides and a half of a piece on the bottom. Doesn’t have to be perfect and overlap just a little. (sorry I used a scratched up pan for my photos.)
Next either drop in a full egg or scramble an egg and pour in. Add what you want. Plain is good too.
Bake for about 15 minutes or until the eggs are done the way you like them. That’s it!

Love some of the foods and photos here but why don’t I see a temp to some of these? Do I bake at 350? or up to 450? I don’t care about scratched pans, then I know they are well used but I want full recipes. Please read over before submitting. I just received another one on a blog and it gave the same ingredient twice with different amounts and and down in the instructions it called for an ingredient not listed. I figured it out but just saying people need to read over what they submit to make sure it is 100% there, no guess work. Sorry but as an editor of a newsletter that has nothing to do with foods I read over all articles I write and those submitted to me and sleep on it, come back the next day and reread. Many times I find mistakes, information left out like dates, times, exact location etc.
Please ignore the temp comment, It does not show up here but when I went to copy this into my recipe file the directions did show up so it is a glitch in probably our server and it does this now and then. Temp is there of 400. Only thing that showed up here until copied was the scratch pan part. Love and hate the internet so much. Once again I apologize.
