Jake and Emma make a rainbow cake

Easter sunday is tomorrow and I wish I were with my cousins.   The little ones will be hunting for eggs and jumping off the ceiling on a sugar induced high.  My little ones, now 18 and 21 will be doing nothing of the sort.  That hunting for eggs ship sailed about 10 years ago :(

When I made the decision to retire from the baking business there were several things on my mind.  I knew I wanted to deliver my daughter to college back east, drive across the country sampling sweet shops (hence the Sweets Tour), and most of all visit my east coast extended family.   I don’t see them all that much.  My regular scheduled life gets in the way and traveling to the east coast gets complicated.  

I’ve been traveling now for almost a year and I was lucky enough to spend some time with my cousin and her young adorable family.  She has the cutest little kids on earth, honest.   Her husband seems to tolerate me and my extravagant baking ways,  that’s always a plus.  We even made this rainbow cake for Grandma’s birthday on one of my sleepovers.  You know the kind that you have seen around the web.

The kids got to use edible ink markers and draw right on the cake!!!  It was a freaking mess alright.  My cousin has a new kitchen so I quickly had to clean it before she got home from work or I would have been dead meat.  Lucky for me when she sees this photo I’ll be in California.  Haha.

I let Jake and Emma help with the fondant work as well.  Probably not one of my better ideas but they loved it.  I like their impromptu drawings on the cake the best.   No recipe for this one to handout,  just my vanilla cake recipe with truck loads of food coloring.

You made your visit to your cousin a memorable one for her two children. I don’t think they will forget creating and decorating this adorable cake with you for a long, long time. Happy Easter!
