Can you believe it? Square cupcakes!!! Robin Ross the genius behind Cupcakes Squared was a graphic designer before she got into the cupcake business. Now that doesn’t surprise me. She opened the doors April 2008 in a family orientated area of San Diego. One of my regular customers moved to San Diego and found this shop. She called one day to say you have to try this place they are amazing. So I did:)

From the minute I got in the door I was aw struck. Square cupcakes! Square mini cupcakes! I couldn’t stop staring. I thought to myself how great it would be to use these at big events and how nicely they would stack. So jealous, why hadn’t I thought of this?
The flavor offerings were unusual but not ridiculous, Pistachio Pomegranate, Lilikoi (passionfruit), Coconut Lime, Rum cake infused with orange juice, Maple Pecan. Naturally she also has the standards. The Carrot Cake has pineapple, pecans, currants with cream cheese frosting. Another favorite would be Lemon White Chocolate baked with a lemon white chocolate chip cake frosted with lemon buttercream. No artificial coloring or flavoring is used, all natural. The pricing is $3.00 for the full size and then going up to $3,75 for some of the specialty flavors.
The frosting is more of an Italian buttercream, meaning it has more of a buttery taste. Normally I’m not a huge fan but it worked with these subtle flavors. The cakes were moist and not over powered by the frosting.
It’s no wonder her business is thriving even though a dozen cupcake shops that have popped up in the last year.
When she starts selling square pans and papers to the public I’ll be first in line!

What does a pistachio pomegranate cupcake taste like? I think I’d like to try it. Square cupcakes – what a cube idea!
It’s subtle but you get both flavors together. The pistachio lingers for a nice finish!
